Fathers day is often a hard one, how do you find something that shows your Dad just how much he means to you, just how great full you are for all that he does….renovation work, flat pack assembly and gardening included?! The answer could lie not in finding something to gift him but rather in creating memories with him and all those important to you both. Why not cook your Dad up a rustic, delicious feast fit for a king this fathers day, set a beautiful table and gather around to share stories, laughter and a whole lot of celebrating. Nothing says family feast quite like a roast and we have a gorgeous roast chicken recipe to share with you that will ensure your dad feels like a King this fathers day!
Roast chicken with lemon, herbs and creme fraiche
1.2kg free-range chicken
300ml creme fraiche
2 garlic cloves, finely diced
1 tbsp chopped rosemary
1 tbsp chopped thyme
1 tbsp chopped oregano
½ tbsp chopped sage
½ tbsp chopped marjoram
½ tbsp finely grated lemon zest sea salt and freshly ground pepper
1. Take chicken out of the fridge for at least an hour before cooking to allow it to come to room temperature.
2. Preheat oven to 180C.
3. Mix creme fraiche with the remaining ingredients. Spoon half the mixture inside the chicken cavity then truss the chicken. Spread remaining mixture on top of the chicken. Place the chicken on a rack in a roasting tin. Pour about a quarter of a cup of water in the bottom of the pan. Place in oven and roast for about an hour, until juices run clear. Keep an eye on the base of the roasting tin and add a little more water if needed.
4. Remove from oven and rest on a plate covered with foil. Place the roasting tin on the stove over a low heat and scrape off any bits stuck to the bottom of the pan. Reduce if needed.
5. Carve the chicken and serve at the table with pan roasting juices, perfect roast potato thins (see recipe below) and other accompaniments for a rustic, delicious feast.
PERFECT ROAST POTATO THINS
1kg Large Sebago (starchy) potatoes, peeled
10 sprigs of fresh thyme, leaves stripped
Sea salt and freshly ground pepper
While the chicken cooks, peel the potatoes and cut into thin slices, using a mandolin or sharp knife. Place them in a roasting pan, drizzle generously with olive oil and sprinkle with sea salt, pepper and thyme leaves. Roast for about 45 minutes until they are crispy. Take it all to the table
on big, help yourself platters and let everyone join in, feast and celebrate the glorious figures that are our fathers!
